The jewelry that you sell to the jeweler in the Imperial City market district will transfer to his personal inventory and can be pickpocketed.
You can then sell it to a fence (if you are involved in the theives guild) or keep it for personal use.
NOTE: This has only been tested with jewelery NOT other items!
