First, save enough money to purchase Apotheosis from Rindirs Staffs in the Imperial City.

Once acquired, go to Vindasel and enter the chamber with Umbra. If you cant take the damage from her sword, jump onto the small ledge face on the outerside of the crumbled balcony overlooking Umbra and out of her reach.

Hit her a couple times and she's done.
