Get a Bay Horse (I do not know if other horses work, I use a Bay horse) then find a place where there is a lot of deer.
Ride your horse into the group of deer and they will freeze instantly.
Get really really close to one and get off your horse.
The deer will then start to move.
Quickly attack the deer that is closest to you and keep repeating until you get as much venison as you want.
