Cheat:
For infinite sprint all you need is a torch. Torches can be found on wall scones, bodies, in chests, and are also sold by merchants.

Once you have a torch sprint until your stamina is about two seconds from completely draining. While running, repeatedly press the sprint button.

When it runs out wait a few more seconds while still tapping the sprint button, hold the sprint button and you should have infinite sprint.

Note: You have to have no weapons equipped - i.e. you do not have your sword drawn. This may go on after you let go of the sprint button. To fix this, simply press the sprint button and let go.
