All you do is find a Challenge where you need to kill a certain amount of enemies.
Kill one below the amount required and quit. Then go back on and kill the person to complete the challange.
Then disconnect from Xbox Live and sign in again.
You will have received the credits but the Challenge won't be complete. Then repeat the process.
