First of all, you can't be connected to Live. Start a custom game.
As soon as you are in hold down LB, RB, down on the D-pad, A, and click in the left thumb stick.
After a while, about 2 seconds, your gun will go down.
In order to get it back up, shoot or melee. Have fun making videos!
